Gluten-Free Pancakes

I’ve been working on my gluten-free pancake recipe for a few months.  Every time I make pancakes, I tweak it a little more.  Josh says that the batch I made this week was the best and “perfect”.  That came from a very picky eater!  I used my standard red Betty Crocker cookbook as the basis for my recipe and modified from there.

Ingredients:

  • 1 cup milk (or dairy-free milk)
  • 1 egg
  • 1/2 cup brown rice flour
  • 1/2 cup teff flour
  • 2 Tbs tapioca or potato starch
  • 2 Tbs oil
  • 1 Tbs honey or sugar
  • 1/2 tsp salt
  • 1/2 tsp xanthan gum
  • 1 Tbs Baking Powder

Directions:

Add milk and egg to a mixing bowl.  Wisk together.  Add remaining ingredients except the baking powder.  Stir until combined.  Add baking powder.  Let sit a few minutes.  Batter is usually quite thick.  Add small amounts of water to achieve your desired consistency.

Pour batter onto hot griddle to desired size.  Cook until browned.  Flip and cook until browned.

Makes 12-16 pancakes depending on size.

Josh thinks that the combination of the brown rice and teff makes these pancakes taste almost like his mom’s wheat germ pancakes.  They turn out fluffy and it can be hard to tell that they are gluten-free in my opinion.

Don’t have teff flour?  You could use 1 cup of brown rice or try substituting millet flour for the teff.  Need to go dairy-free too?  Substitute soy, rice, coconut, or almond milk.  I successfully used almond milk when I was dairy-free for Jacob.

The Homeschool Mother's Journal

In my life this week?

I haven’t written a journal entry in a while.  I took a break and was writing a lot of other things like 31 Days of Finding Joy in Depression and a lot of book reflection posts.

In our homeschool this week?

  • We’re working our way through Truth in the Tinsel.  I love how simple the crafts are and how everything is laid out for me.  Kids crafts are not a strength for me.  It’s not too late to jump in and join us.  Making an advent calendar can be really easy.  Take a look at how I made our simple homemade advent calendar.  If you’re doing Truth in the Tinsel, link up with me on Wednesdays during Kids in the Word.  I’ve dedicated Kids in the Word Wednesdays in December to Truth in the Tinsel.
  • Jonathan finished Math Mammoth Subtraction 1.  That’s the third Blue Series 1 book he’s done this fall.  In January we’re going to breeze our way through Light Blue Series Grade 1 and focus on committing the basic math facts to memory.  For the rest of December, we’ll focus fun things like Splash Math Grade 1 and Cross Fingers on the iPad to keep math fresh.
  • We read Winnie-the-Pooh and The House at Pooh Corner in the last month.  Those were big hits!
  • I added Story of the World Volume 1 and the activity book to our curriculum last month.  Jonathan loves listening to me read to him and history has piqued his interest.  We’re making our way through ancient Egyptian history right now and he is loving it.  I’m surprised how well he’s taken to the map work too.  We skipped a book in Magic Treehouse so he could read book #3 about mummies now.  I offered to take him to the mummies exhibit at our children’s museum, but he says that the mummies scare him – no mummies for us as of right now.

In addition to How to Have a H.E.A.R.T. For Your Kids, I’m reading Happily Ever After by Gary Chapman (author of The Five Love Languages) from Tyndale for a review.

I?m cooking?

I made gluten-free potstickers / chinese steamed dumplings.  I’m a litte shocked that they turned out so well.  Josh was happy!

I?m grateful for?

A new niece was born late last night.  She’s the first granddaughter and girl cousin on that side of the family.

Kids in the Word Wednesdays

We’re gearing up for Christmas!

This month, I want to go lighter on the academics and focus more on God, Advent, and Christmas.  I’ve been looking for the right thing to use as my resource and finally found it over the weekend:  Truth in the Tinsel.

This ebook take you and your kids through 24 days of Bible reading and ornament making.  It’s perfect for someone like me who has little imagination when it comes to kid’s crafts.  Everything is laid out for me – the story, the craft, supply list, and extra ideas.  I love Truth in the Tinsel!

Truth in the Tinsel Supplies

I printed and spiral bound my book.  I have most of my supplies gathered.  I had most things floating around the house.  I did have to buy some wiggly eyes and some glitter glue.  I also had to buy flour for making salt dough – since the whole family eats gluten-free most of the time, I don’t usually keep regular flour in the house. {That craft will have to be done without Jacob!}

I’m working on a homemade advent calendar.  {I’ll share next week when it’s all done.}  There are “clues” in the book for using with your own advent calendar.

My plan is to read the story and make the ornament during the day with the boys.  Then, in the evenings when Daddy is home, we can review the story and talk about our ornament.

September Freezer Cooking Day

I have to {live} in this moment.

It’s a messy moment, but most are, aren’t they?

The mess is the product of:

4 meals of browned turkey for tacos
3 meals of homemade spagetti sauce
1 loaf of gluten-free bread
6 gluten-free hamburger buns
2 pounds of garbanzo beans soaked and prepped for bean burgers and salads
4 meals of thai chicken prepped for the crockpot
4 meals of chicken cut and ready to be made into buffalo chicken and sweet & sour chicken
4 meals of pork and black bean soup prepped for the crockpot
4 meals of chicken cut and ready for Asian noodle soup
and
Hamburgers happily eaten by my family last night for dinner.

I was exhausted by the end of this marathon and my dishwasher fell asleep before he could help with the aftermath.  Guess I know what I’ll be doing today…

Thanking God that my family has food to eat.
That I have a home where I can cook yummy meals.
That cooking gluten-free isn’t that hard.
That I won’t see a mess this big for another month thanks to my freezer cooking marathon.

Oh, yes, and I will be cleaning up this mess.  Anyone want to come {live} in this moment?

In my life this week?

What a crazy week this has been at The Pelsers.  Josh was busy getting everything taken care of for his motorcycle: safety class all weekend, insurance, registration, license, inspection, etc.  He drove the motorcycle to work yesterday for the first time and it broke down a few miles from work.  Seriously?  I was all set to celebrate that I finally get my van back and the motorcycle breaks down.  Ugh.  Now we have a car whose engine is all over my garage, a motorcycle that needs to be repaired, and our minivan.  And what does that leave me?  Still stuck at home during the day on weekdays until either the motorcycle or the car is repaired.  Then when Josh brought the motorcycle home and was pushing it back into the garage, he stepped on a fire ant hill.  He had a bite that swelled so bad on one arm that he had to go to the doctor this morning before work and is now on a strong antibiotic with instructions to go to the ER if the swelling and redness extends beyond a circle drawn on his arm.

In our homeschool this week?

  • Jonathan started Kindergarten on Monday!
  • Homeschooling went very well this week!  Some of Jonathan’s favorite things were: math, Astronomy, and The Boxcar Children {we’re reading this again – Jonathan read it to me this summer and now I’m reading it to him}.
  • Jonathan blew Josh’s mind on Wednesday night when he rattled off the planets – in order.
  • We celebrated homeschooling {and I got my van back day} by going to Startbucks yesterday morning to do our school work while all the public school kids had their first day of school. {Yes, I promptly had to give the van right back after yesterday’s motorcycle break down.  We enjoyed the freedom while it lasted.}

My favorite thing this week was?

  • Jacob is trying to take steps!  He can stand on his own for a few seconds and if we prompt him and help him, he’ll try to take a step, sometimes two.
  • Jacob the Climber.  If we leave the car bucket out from under the train table, he uses it to climb up onto the train table.
  • My amber necklace from Inspired by Finn arrived yesterday.  Yes, this one is for me.  I’m wearing it now and will be reviewing it soon.

  • I’m always on the lookout for new gluten-free, dairy-free recipes.  I had some buffalo wing sauce that I picked up on sale a while back.  I found a modified a GF/DF chicken nugget recipe to use ingredients that I had on hand.  Wow.  I think they may have been the best chicken nuggets I have ever had!  We smothered those in the buffalo sauce for amazing buffalo chicken bites.  Seriously.  A-maz-ing.
  • I also made some delicious GF/DF mocha muffins earlier this week.  The recipe came from Once A Month Mom.  I used rice flour since I was out of sorghum and I used potato starch.  For the coffee, I used Starbucks carmel flavored coffee in my espresso machine.  So yummy and not icky sweet.

I?m praying for?

  • Quick repairs to the motorcycle.
  • Swelling/irritation in Josh’s arm to go down.
  • Jacob’s next tooth – We’ve had a good bit of snot and low-grade fevers this week.  I know there’s a tooth ready, but it just won’t come through.
