I've made two different versions of fish tacos so far. We preferred the “breaded” version, but both were great. Josh described the breaded version as “excellent.”
For the “plain” version, I put several pieces of Tilapia in a baking dish. Drizzle with olive oil and sprinkle with garlic powder, salt, and pepper. Bake in the oven. I think I did mine at about 375F for 10-15 minutes.
For the breaded version, you'll need:
- A couple tablespoons of melted butter in a bowl.
- Panko breadcrumbs in a bowl.
Dredge a piece of Tilapia in the butter until coated. Immediately dredge in the breadcrumbs until coated. Lay in a baking dish. Repeat for remaining fish. Sprinkle with garlic powder, salt, and pepper. Bake at around 375F until the fish is cooked and the coating is lightly browned and crispy.
Each person was served a fillet and got to build their tacos however they wanted with tomatoes, onion, guacamole, homemade green sauce, beans, rice, sour cream, etc. Homemade green sauce? Yup.
I've made the green sauce a few times since I got my food processor. I don't really measure sometimes, so bear with me…. You'll need:
- Tomatillos
- Onion
- Garlic
- Salt
- Cilantro
- Lemon Juice
To get the skins off the tomatillos, I put them in boiling water for a minute. Peel off that papery outer skin and toss them into the food processor. Peel an onion, chop into a few pieces and add to food processor. Peel a few cloves of garlic and add to the food processor. Sprinkle in a little salt, toss in a little fresh cilantro, and drizzle in a little lemon juice. Pulse to desired consistency. Adjust seasonings to taste. You could add a little spicy pepper of your choice to bring up the heat too. Spoon it over your taco or use as salsa for your homemade tortilla chips.
Everyone in my house loves fish. Tilapia is one of our favorites because it can be found relatively inexpensively and prepared in so many different ways. I used to be able to share some of my piece with Jonathan but he likes it some much that I have to make a piece just for him now.
